Unsweetened chocolate for the fail

I’ve been making David Lebovitz’s brownies for years, and it’s a reliable and delicious recipe that just happens to be gluten free. I made them a few years ago for my pal, Emily, who is a chef, and she now sells them at her restaurant takeout counter, they are that good.

I always try to use Fair Trade chocolate and cocoa, but I needed a contribution to a meal for after a wake and didn’t have any chocolate on hand, so I raided my mother’s pantry. All my life she has had two boxes of Baker’s Chocolate on hand, a blue box of unsweetened and a red box of semi-sweet, but there was only the blue box, so I grabbed it and started baking.

Unsweetened chocolate is 100% cacao. It did not work. The chocolate Lebovitz suggested (bittersweet or semisweet) contain cocoa butter and sugar, which must have been what was missing.

Do make these brownies, and learn from my chocolate ignorance.

Courgette My Love

Feeling a bit “squashed” by zucchini? Only two of my summer squash plants made it through the hens picking most of the garden to death, but, really, there have been plenty of zuccs to go around with only two plants!

Thankfully, The Guardian has a cornucopia of courgette recipes. Just made Nigel Slater’s recipe for sweetcorn cake (I didn’t read the part where it makes two cakes, so ended up with one, which was fine), and last week make this rather odd-sounding but completely delicious Creamy Courgette and Tarragon Cobbler. Both vegetarian and easily made vegan and gluten free.

A pro tip from my mother, who used to grow and freeze oodles of corn: cutting corn off a cob is a lousy and potentially dangerous job, so cook your corn on the cob, then pry the kernels off using a fork. They come off the cob easily as you run the fork along, and stay pretty much whole, so no waste. You also don’t slice your thumb off, which makes everything better. I also find steaming corn is better than boiling it, and that’s what I did for the sweetcorn cake recipe.

I made this fish biryani (every Thomasina Miers recipe seems to be golden!) for supper while listening to Enjoy Your Life by Marina more times than might seem appropriate for an old doll like me.

Stoic Week is going well (and Marina is half Greek, after all!), and maybe I’m not Stoic enough to sit back and enjoy my problems, as she suggests, but I’m working on it!
